Produced in the same way as champagne, Le Seyssel Mousseux (20 hectares) is placed in a cellar once bottled, where it undergoes a second period of fermentation. With a floral nose and delightful colour, this wine, created mainly from Molette grapes, makes an excellent aperitif or dessert wine, particularly with Saint-Genix cakes.
